TRANS AND SATURATED FATTY ACIDS CONTENTS IN BISCUITS AND SNACKS

The present study aimed to evaluate the adequacy of Brazilian productive sector to legal
requirements for total fat content (TF), saturated fatty acids (SFA) and trans fatty acids (TFA) on
foods labels. Samples of salt biscuits (31), sweet biscuits (20) and snacks (24), collected by
health surveillance of São Paulo state have been analyzed from 2009 to 2010. TF and FA were
determined according to Adolfo Lutz Institute’s physicochemical Methods of foods analysis. In
about 50 products, at least one component presented values 20% above the declared. The
claim "trans-free" was verified in 20 salt biscuits, 8 sweet biscuits and 17 snacks; of these, only
a sweet biscuit presented TFA above 0.2 g per serving, while SFA levels were above 2.0 g per
serving, in 5 salt biscuits, 2 sweet biscuit, and 5 snacks, contrary to ANVISA’s recommendation
for products with such claim. Results indicate that, despite discrepancies between experimental
values and declared, Brazilian industries employ technologies and raw materials to minimize
trans fatty acid contents; but they should also seek for alternatives to avoid increasing SFA
content in the final product.
