Chocolate Mousse with Alta Selecção olive oil,
ginger and red berry coulis
Olive oil Alta Selecção
with 70% cocoa
Strawberries / raspberries
Mix the butter, olive oil, chopped ginger and sugar and beat until it doubles in size.
Add the egg yolks one at a time, and beat for 10 minutes.
Melt the chocolate in bain-Marie or in the microwave (if you choose this solution you
must pay attention the chocolate doesn’t burn).
Beat the egg whites to stiff peaks.
Add the chocolate to the mixture and beat for 5 minutes. With the help of a spatula,
fold in the egg whites in order to obtain a light mousse.
Place in the refrigerator for at least 3 hours.
For the coulis:
Cook the berries in 100g sugar for 10 minutes. Beat in a blender and strain.
Serve the mousse with the red berry coulis and a drizzle of Alta Selecção olive oil.
