This summer season, Pine Cliffs Resort offers its

events, notably the 17th Pine Cliffs Summer Gala
with the performance of Ne-Yo, here for the first
time in Portugal. It promises to be a spectacular

“Embora a minha esposa Maureen e eu tenhamos
vindo para o Algarve há já 30 anos, só nos tornámos membros do Pine Cliffs há cerca de 6 anos,
quando comprámos uma semana Golf Prata e
imediatamente, desejámos ter encontrado este paraíso mais cedo. Temos sido muito felizes com as
instalações e, ainda mais importante, com a gentileza, cortesia e atenção aos detalhes da equipa, de
tal modo que fizemos o upgrade da nossa semana
Prata para uma semana de Ouro e comprámos,
ainda, outra semana de Ouro.
O golfe é uma grande atração para nós mas, mesmo quando não estamos a jogar ou a praticar golfe, ainda há muito para fazer no resort e nas instalações, até mesmo um agradável passeio na praia.
Na realidade, agora questionamo-nos se precisamos de alugar um carro, visto que dificilmente
nos afastamos do resort durante a nossa estadia. A
nossa família junta-se a nós, regularmente e a nossa filha Becky e o seu marido Webster escolheram
para ter o seu casamento aqui, em 2009, altura em
que 50 pessoas jantaram e dançaram até às 5 da
manhã. Lembranças preciosas e memoráveis!”

“Whilst my wife, Maureen, & I have been coming
to the Algarve for nearly 30 years, we only became
Pine Cliffs members approximately 6 years ago
when we bought a Silver Golf week and immediately
wished we had found this haven of paradise sooner.
So pleased have we been both with the facilities and
more importantly the kindness, courteousness and
attention to detail of the staff, we have upgraded our
Silver week to a Gold week and purchased a further
Gold week. The golf is a major attraction to us but
even when we are not playing or practising our golf,
there is still plenty to do from the keep fit facilities to a
pleasant stroll on the beach. In fact we now question
whether we need a hire car, as it hardly moves off the
resort during our stay. Our family regularly join us
and our daughter Becky and her husband Webster
chose to have their wedding here in 2009 when 50 of
us were wined and dined and then we danced on the
beach until 5 in the morning. Treasured memories.

YAKUZA by Olivier at Pine Cliffs Resort, brings “The
Best of Summer” with the Algarve’s finest Sushi and
other exquisite specialities. The restaurant has a tranquil
ambience filled with charm in a perfect surrounding,
open every day for dinner. The fusion of genuine Japonese
flavours is done by the Sushi expert, Mr. Agnaldo Ferreira.
The menu has dishes that were specifically created for the
new YAKUZA by Olivier at Pine Cliffs Resort while others
are from the very well-known YAKUZA in Lisbon, such as
soft shell crab in uramakis, combined specials, like Gunka
Freestyle or Agnaldo Freestyle, both consisting of a 10 piece
dish. There are also hot wok meals, the Yaki Udon with
squid and shrimp, or other unique delicacies from Olivier,
like the Kobe Rump, or Fish in puff pastry are highly

Melissa Odabash’s latest Swimwear Photo Shoot
that took place between 5th and 8th June 2013,
at breathtaking surroundings such as the beach,
cliff tops, private villa and swimming pools within
the resort.To mark the fashion collaboration, the
resort also hosted a VIP deluxe cocktail party
with the special presence of Julien MacDonald
and Melissa Odabash at its newest stylish
Japanese restaurant, Yakuza by Olivier where
VIP guests enjoyed Japanese specialties with a
Mediterranean twist whilst in a perfect relaxing
atmosphere.
Julien Macdonald commented: “Pine Cliffs
Resort is an incredible location in beautiful
Portugal. The drama of the cliffs against the
beauty and serenity of the beach and the calmness
of the ocean makes the whole resort a perfect
place to relax and unwind in a breathtaking
scenery. It was such a pleasure to shoot our latest
look book in the spectacular grounds of Pine Cliffs
Resort with such friendly staff and great food.”

LOMBINHO DE BORREGO
~ Lombinho - 750grs
~ Azeite - q.b.
~ Flôr de sal - q.b.
~ Pimenta - q.b.
Preparação: Limpar o lombinho, temperar e marcar. Deixar
descansar a carne. Colocar o manto de pão, rechear com a
farce de ervas e colocar o lombinho, enrolar com papel vegetal siliconizado. Levar ao forno a 180º durante 10 minutos.
FARCE DE CARNE
~ Carne de frango moída - 100grs
~ Brandy - q.b.
~ Vinho do porto Tawny - q.b.
~ Sal - q.b.
~ Pimenta - q.b.
~ Natas - 1dl
~ Salsa - 15grs
~ Tomilho limão - 5grs
Preparação: Marinar a carne com as bebidas, colocar no robot e triturar. Adicionar as natas e as ervas previamente picadas. Quanto estiver homogéneo retirar e guardar no frio.
COMPOTA DE FIGOS E AMÊNDOAS
~ Figos - 500grs
~ Açucar - 250grs
~ Pau de canela - 0,10grs
~ Amêndoas (filetada) - 250grs
~ Água - 250ml
Preparação: Levar a água ao lume com o açucar e pau de
canela, adicionar os figos e amêndoas deixando reduzir em
lume brando.
LAMB TENDERLOIN
~ Lamb Tenderloin - 750grs
~ Olive Oil - 1 Tbsp
~ Flôr de sal (Flower of salt)
~ Pepper
Preparation: Clean tenderloin, season and sear in a pan from
all sites. Let the meat rest. Take the coat of bread, fill with the
farce of herbs together with the tenderloin and wrap it with
siliconised baking paper. Put in oven and bake for 10 minutes
(180º).
MEATFARCE
~ Chicken breast cut into small pieces - 100grs
~ Brandy
~ Tawny port wine
~ Salt
~ Pepper
~ Cream - 1dl
~ Salsa - 15grs
~ Lemon Thyme - 5grs
Preparation: Marinate the meat with all the above, place into
a food processor and add cream and chopped herbs. Once it is
homogeneous, store it cold.

~ Figs - 500grs
~ Sugar - 250grs
~ Cinnamon stick - 0.10grs
~ Almonds (filleted) - 250grs
