Christopher Columbus returned to Europe from Central America carrying one of the hot chili peppers: Capsicum frutescens. Quickly, it made its way round the globe. Known in Creole as Zozio, it is one of the main ingredients in West Indian cuisine. It is particularly pungent and is also found in Eastern, African, South American and Mediterranean dishes. It can be used in soups, ratatouille, meat with sauce, oils and vinegars, punches and cocktails. Page 3
