Nach dem Verkauf der Parfümeriekette Alrodo erwarb er Weingüter in Frankreich, Spanien und Italien und ist mittlerweile auch Besitzer der Kristallmanufaktur Lalique. – Silvio Denz enjoys investing in attractive luxuries. Since selling his Alrodo chain of perfumery stores, this successful Swiss entrepreneur has acquired wine estates in France, Spain and Italy. He is now also the owner of crystal manufacturer Lalique. SIE LEBEN ABWECHSLUNGSWEISE IN PARIS UND IN LONDON UND SIND VIEL UNTERWEGS. WO IST IHR ZUHAUSE? Da, wo ich meine Koffer abstelle. Seit 2002 wohne ich in London, reise aber rund 200 Tage im Jahr. Auch Paris ist heute wichtig für mich. Ich liebe beide Städte mit ihren unterschiedlichen Mentalitäten und Architekturen. In der Regel fixiere ich keine Termine länger als sieben Tage im voraus um stets flexibel zu sein und schnell reagieren zu können. SILVIO, YOU LIVE IN PARIS AND LONDON AND SPEND A LOT OF TIME ON THE ROAD. WHERE DO YOU CALL HOME? Wherever I unpack my case! I’ve been living in London since 2002, but I spend about 200 days a year travelling. Paris is important to me, too, nowadays. I love both cities, with their different mentalities and architectures. As a rule, I never make any appointments more than seven days ahead, though, so I can always be flexible and quick to respond. Auch wenn diese drei Länder sehr verschieden sind und die Weine unterschiedlich schmecken, ist die Herausforderung an alle drei Weinberge doch ähnlich – speziell in Bezug auf Klima und Vegetation. IF YOU HAVE TO MAKE A DECISION ABOUT ONE OF YOUR WINE ESTATES, FOR INSTANCE? Yes. I have estates in Italy, Spain and France – in three very different countries producing their quite distinctive wines. But the challenge is similar at all three estates, especially in terms of the local climate and vegetation. ANSONSTEN SIND DIE DREI REGIONEN ALLERDINGS GANZ ANDERS. Die Nachbarn reagieren ablehnender auf alles Fremde und Neue. Veränderungen sind nicht wirklich willkommen. In Bordeaux sind die Vorschriften in Bezug auf Rebsorten, Weinanbau und THE THREE REGIONS DIFFER IN OTHER WAYS, TOO. I CAN IMAGINE THAT YOU WEREN’T RECEIVED QUITE AS WARMLY IN BORDEAUX AS YOU WERE IN TUSCANY... That’s true: they’re far more sceptical in Bordeaux. The neighbours tend to reject anything foreign or new, and don’t really welcome change. And the regulations in Bordeaux on what vines, growing methods and vinification techniques can be used are far stricter than in Italy or Spain. Also: in Bordeaux, the ratings – especially the Parker ratings – have a greater influence on wine prices. Silvio Denz hat sein Vermögen mit erlesenen Düften gemacht. WOHER KOMMT DIESER WUNSCH, EIN EIGENES WEINGUT ZU HABEN? Von meinem Vater habe ich die Passion zum Wein geerbt. In den 1980er-Jahren begann ich mit dem Aufbau eines eigenen Weinkellers. In den 1990er-Jahren habe ich mit Freunden eine Weinhandlung in Zürich gegründet und ein kleines Weingut in Spanien erworben. Mein grosser Traum war aber immer der Besitz ein eigenes Schlosses in der Region um Bordeaux. Dieser Traum wurde 2005 Wirklichkeit. Der Schweizer Stararchitekt Mario Botta hat für Silvio Denz die Kellerei von Château Faugères in Saint-Emilion gebaut. YOU’RE NOT FROM A WINEGROWING FAMILY: YOU CAME INTO IT FROM A COMPLETELY DIFFERENT DIRECTION. SO WHERE DID THIS DESIRE TO HAVE YOUR OWN ESTATE COME FROM? It was from my father that I inherited my passion for wines. I started building up my own cellar in the 1980s. Then in the 1990s I founded a wine business in Zurich and acquired a small estate in Spain together with some friends. But my big dream was always to own my own château in the Bordeaux region. And in 2005 that dream became reality. IST WEIN FÜR SIE EIN INVESTMENT? Wein ist für mich Passion und Anlage zugleich. Bei einer Investition in ein Weingut sind vor allem Appellation und Terroir wichtig. Ein Weingut kann durch Steigerung von Qualität, Bekanntheitsgrad und Klassifizierung zusätzlich an Wert gewinnen. Es gelten eigentlich dieselben Überlegungen, wie wenn man ein Stück Land oder eine Liegenschaft erwirbt. Befindet sich das Haus oder die Wohnung in einem guten Stadtteil? Werden hier die Bodenpreise steigen oder verliert die Liegenschaft in 20 Jahren ihren Wert? Die Rebflächen in Saint-Emilion sind limitiert. Erstklassige Parzellen auf dem Plateau von Saint-Emilion sind bald teurer als Bauland in Saint-Tropez. Auch qualitativ hochstehende Weinberge in der Toskana sind gesucht. Einen kleinen Weinberg als Hobby zu besitzen mag reizend sein. Ein grösseres Weingut sollte hingegen nur professionell betrieben werden. Das Risiko wäre sonst sehr hoch. DO YOU SEE WINE AS AN INVESTMENT? To me it’s a passion and an investment rolled into one. When you invest in a winegrowing estate, it’s the appellation and the terroir that are the prime considerations. But you can also enhance an estate’s value by raising the quality, profile and classification of the wines you produce. In fact, the considerations are broadly the same as if you were buying any other property or land: Is it in a good location? Are the land prices around here going to rise, or will it be worth less in 20 years’ time? The vineyards of Saint-Emilion are a very finite commodity. Top-class land on the Saint-Emilion plateau will soon be more expensive than building land in Saint-Tropez. High-quality vineyards in Tuscany are sought after as well. There’s another aspect to consider, too. It may be quite a thrill to run a small vineyard as a hobby. But a bigger estate should only be managed professionally: any other way would just be too risky. DER STARARCHITEKT MARIO BOTTA HAT FÜR SIE DEN WEINKELLER VON CHÂTEAU FAUGÈRES IN SAINT-ÉMILION GEBAUT. WIE MUSS MAN SICH EINE SOLCHE ZUSAMMENARBEIT VORSTELLEN? Ich habe für dieses Projekt neben Mario Botta auch Jean Nouvel und Santiago Calatrava angefragt. Mario Botta und ich haben uns von Anfang an sehr gut verstanden. Mit Önologen und Ingenieuren haben wir zuerst die Anforderungen an den neuen Weinkeller wie Rauminhalt, Grundriss und Arbeitsfluss definiert. Mario Botta ist es dann gelungen, diese technischen Vorgaben in ein Gesamtwerk, in eine Kathedrale des Weins, umzusetzen. YOU HAD YOUR WINE CELLAR AT CHÂTEAU FAUGÈRES IN SAINTÉMILION BUILT BY MARIO BOTTA, THE WELL-KNOWN SWISS ARCHITECT. WHAT WAS IT LIKE WORKING WITH HIM? As well as Mario Botta, I also sounded out Jean Nouvel and Santiago Calatrava for this project. Mario and I were on the same wavelength from the start. We began by talking to engineers and oenologists about the requirements the new cellar would need to meet: space, floor plan, workflows and so on. Mario then took all these technical specifications and turned them into a “Cathedral of Wine”. SIE KOMBINIEREN WEIN MIT ARCHITEKTUR – WAS FASZINIERT SIE AN DIESER KOMBINATION? Guter Wein und schöne Architektur stehen für Genuss und Ästhetik. Paart man beides, entsteht eine neue Dimension der Wahrnehmung. Eine solche Kombination kann attraktive Emotionen auslösen. Unser neuer Weinkeller dient in erster Linie der Weinzubereitung, ist aber auch ein Ort der gesellschaftlichen Begegnung und des Gedankenaustausches. YOU SEEM TO ENJOY COMBINING WINE WITH ARCHITECTURE. WHAT’S THE FASCINATION? Good wine and fine architecture are both an embodiment of aesthetics and enjoyment. Put them together and you have a new sensory dimension. A combination like this can generate highly appealing emotions. Our new wine cellar is primarily intended for producing our wines; but it has a social role, too, as a place where people can meet and exchange thoughts and experiences. 50 WINE TALK Ein Mann mit Visionen: Silvio Denz umgibt sich gerne mit schönen Dingen. Ein besonderes Flair hat er für Weingüter in Bordeaux. WINE TALK 51 WIE MEINEN SIE DAS? Heute benutzen wir nicht mehr nur ein Parfum, wie das früher üblich war. Wir haben verschiedene und verwenden sie je nach Anlass oder Stimmung. Spannend ist, dass diese Parfums vom Duft her ganz unterschiedlich sein können. Von herb über würzig, schwer oder frisch. Das Parfum ist wie die Laune. Daher der Vergleich mit dem Wein. Man entkorkt, auf was man gerade Lust hat – von leicht bis schwer, fruchtig bis würzig. HOW DO YOU MEAN THAT? People nowadays don’t just have one particular perfume, as they used to. We tend to have several, and use whatever seems appropriate to our mood or the event. The exciting thing here is that these perfumes can be quite varied in terms of their scent: tangy, spicy, heavy, fresh. The perfume matches the mood: and that’s how it’s similar to wine. You’ll open what you feel like drinking: light, heavy, fruity or spicy. WAS TRINKEN SIE, WENN SIE FLIEGEN? Auch hier spielt die Stimmung eine Rolle. Natürlich ist der Weingenuss in der Luft nicht derselbe wie zu Hause am Mittagstisch. Im Flugzeug trinke ich auch gerne mal ein Glas Champagner. Aber natürlich kommt es auch darauf an, wie lange ich fliege und ob ich arbeite oder nicht. WHAT DO YOU DRINK WHEN YOU FLY? This is another place where my mood is important. Enjoying a glass of wine in flight is a different experience, of course, from enjoying one over lunch at home. I’ll often have a glass of champagne on board. Needless to say, it also depends on how long the flight is and whether it’s a work or a leisure trip. Zwei Topweine aus dem Portfolio von Silvio Denz. Silvio Denz is the founder and chairman of the board of Art & Fragrance (A&F), home to such well-known perfume brands as Alain Delon and Jaguar Fragrances. From 1980 to 2000, Denz, who is a Swiss national, was owner and chairman of the Alrodo perfumery store chain, which he successfully sold to French-based Marionnaud Parfumerie. Silvio Denz has since repeated his business success in the real-estate sector, where he has acquired holdings in various wine estates and wine merchants WHAT WINES DO YOU DRINK YOURSELF AND ON WHAT OCCASIONS? Bordeaux is my favourite. I’ve drunk many, many wines from all over the world in my life, but I always come back to Bordeaux. It’s the centrepiece of the wine world. The range of aromas that the Cabernet Sauvignon and Merlot grapes can achieve is phenomenal. And I’m convinced, by the way, that wine should be a part of any good meal. Je nachdem wo ich bin, trinke ich am Mittag mein Glas Wein, beispielsweise einen kühlen Rosé im hochsommerlichen Südfrankreich. An einem kalten Winterabend ziehe ich einen eleganten Bordeaux vor. Die Wahl des Weins hängt von Stimmung, Ort und Jahreszeit ab, vergleichbar mit der Wahl eines Kleidungsstücks oder eines Parfums. WHAT ROLE DOES WINE PLAY IN YOUR DAY-TO-DAY ROUTINE? Depending on where I am, I’ll often have my glass of wine at lunchtime – maybe a chilled rosé, for instance, if it’s high summer and I’m in the south of France. On a cold winter evening I’ll tend to go for an elegant Bordeaux. My choice of wine depends on my mood, the place and the time of year: a bit like choosing a particular scent or what to wear. Die grosse aromatische Vielfalt, die durch die Traubensorten Cabernet Sauvignon und Merlot erreicht werden kann, ist einzigartig. Wein gehört zu einer guten Mahlzeit.
