principles of organic and biodynamic agriculture and is certified by the German

Foram necessários quatro anos e 10 milhões de dólares para concluir a construção que se
eleva na paisagem do Vale Apalta, próximo à cidade de Santa Cruz. Projetada pelo arquiteto
chileno Roberto Benavente, a edificação lembra um barril e abriga em seus oito andares (seis
deles subterrâneos, escavados em uma rocha gigante) a produção premiadíssima de Alexandra Marnier Lapostolle, dona da Lapostolle e descendente da família francesa criadora do famoso licor Grand Marnier. Em 2012, seis dos rótulos da casa constavam do relatório Insider,
publicado pela americana Wine Spectator, uma das mais conceituadas revistas sobre vinhos
do mundo. Entre eles está o Clos Apalta 2009, que recebeu nota 96 em uma escala que vai
até 100 pontos. No grande salão de entrada, as uvas, produzidas com técnicas orgânicas e
biodinâmicas, são retiradas dos cachos manualmente e levadas aos enormes tonéis onde se
transformam em vinho pelo processo gravitacional: o líquido vai “descendo” os andares da
vinícola conforme sua fase de produção, evitando, assim, a manipulação. Na sala onde se faz
a degustação, uma belíssima mesa de vidro se abre e dá lugar a uma escada para um subterrâneo que abriga a chamada “biblioteca de madame Marnier Lapostolle”. Ali estão centenas
de garrafas de todas as safras da bodega e outros vinhos especiais guardados pela empresária.
A vinícola também oferece hospedagem luxuosa em sua Lapostolle Residence, formada por
quatro casas encravadas no bosque da propriedade.

It took four years and USD 10 million to build
the structure that stands in the middle of the
Apalta Valley landscape, nearby the city of
Santa Cruz. Designed by Chilean architect
Roberto Benavente, the building resembles
a barrel and contains, in its eight stories (six
of which are underground, carved in a giant rock), the award-winning production of
Alexandra Marnier Lapostolle, owner of Lapostolle and descendent of the French family
that created the famous Grand Marnier liqueur. In 2012, six of the house's wines were
listed in the Insider report published by the
American magazine Wine Spectator, one
of the most renowned wine publications in
the world. Among them, Clos Apalta 2009,
which was given a score of 96 out of 100. In
the large entrance hall, the grapes, produced
with organic and biodynamic techniques,
are removed from the bunches by hand and
brought to the enormous casks where they are
transformed into wine by a gravitational process: the liquid “descends” the winery's floors
according to its phase of production, thus
avoiding manipulation. In the room where
the tasting sessions are held, a beautiful glass
table opens up and gives way to a staircase
that leads underground to a cellar where the
so-called “library of Madame Marnier Lapostolle” is located. It is home to hundreds of bottles from all the bodega's harvests and other
special wines stored by the businesswoman.
The winery also offers luxury accommodations at its Lapostolle Residence, comprised of
four houses embedded in the grounds' woods.

quando o imigrante catalão Miguel Viu-García se estabeleceu em San Carlos de
Cunaco, no coração de Colchagua. Para
quem vai com a família, uma das atrações
é o passeio de charrete para conhecer os
vinhedos. Os turistas também podem
participar da colheita e fazer seu próprio
vinho. Mas a experiência mais deliciosa
está no estúdio da chef Pilar Rodriguez,
que oferece aulas de gastronomia e de
harmonização com vinhos para grupos
de até 16 pessoas. Entusiasta dos ingredientes locais, como a pimenta merken e
o sal da Lagoa de Cahuil, Pilar surpreende
com pratos que levam frutos do Pacífico,
como machas, queijos frescos da região
de Marchigüe e um delicioso sorvete artesanal de murta, uma fruta nativa. “Um
dos princípios para fazer refeições harmonizando a comida com os vinhos é optar por pratos simples, que não misturem
muitos sabores, para não anular o paladar
da bebida”, conta Pilar. E se o prato for
muito apimentado ou gorduroso? “Então,
vá de cerveja”, diz ela.
Cooking and day trips
With two gold medals and four silvers at the 2013 International Wine Competition in Brussels, Belgium, Viu Manent is one of the country's oldest bodegas, founded in 1935, when
Catalonian immigrant Miguel Viu-García settled in San Carlos de Cunaco, in the heart of
Colchagua. For those traveling with family, one of the attractions is the carriage ride through
the plantations. Tourists can also participate in the harvest and make their own wine. But the
most delightful experience at the locale is at chef Pilar Rodriguez's studio, which offers lessons
in culinary arts and wine harmonization for groups of up to 16 people. An enthusiast of local
ingredients, like Merkén peppers and salt from the Cahuil Lagoon, Rodriguez surprises guests
with dishes made with seafood from the Pacific, like machas, fresh cheese from the Marchigüe
region and delicious artisan ice cream made with murta, a native fruit. “One of the principles
in making meals match with wine is to opt for simple dishes, which don't mix too many flavors, in order not to annul the beverage's taste,” says Rodriguez. What if your dish is especially
spicy or fatty? “Go with beer then,” she says.
