• 4 cups of water
• 4 eggs
• 1 lb Jumbo shrimp, Head on
• 1 small onion, minced
• 1 bunched fresh cilantro,
chopped
• Kosher salt
• 1/2 lb stale bread, thinly sliced
• 1/2 cup of olive oil
• 1 Tsp Red chili pepper flakes
• Lemon juice

1) Boil shrimp in heavily salted water
for one minute and save the water.
This will be used as a stock.

4) Strain stock from cooking the
shrimp heads and pour while still hot
over the bread. Let bread absorb the
stock and then add sautéed onions and
garlic mixture.
2) Shell shrimp, and reserve in a
mix of ice with salt, chili pepper and
lemon juice. Crush shrimp heads and
bring to a boil with some of the stock.
5) Add shrimp, mix and season to
taste. Transfer to warm stoneware
serving platter. Crack eggs over the
Açorda and mix well.
3) Sauté garlic and onion until onion
is tender. Add cilantro and half a cup
of stock and bring to a boil.
