RESUMO A prevalência de doenças alérgicas em crianças e adultos aumentou consideravelmente nas últimas décadas. As alergias alimentares fazem parte desse aumento e tornaram-se um grande problema de saúde impactando de forma significativa na qualidade de vida dos indivíduos. Os riscos à saúde aumentam à medida que os alimentos consumidos são cada vez mais processados e complexos. Nesse contexto, as alergias alimentares são bem mais comuns no grupo pediátrico do que em adultos e possui considerável impacto médico, financeiro e social. A alergia à proteína do leite de vaca é a alergia alimentar mais comum na infância, entretanto a apresentação clínica da patologia depende e varia devido à resposta imunológica provocada pelo antígeno alimentar e seu diagnóstico torna-se difícil, uma vez que não há combinação de exames que disponibilize tal diagnóstico. A alergia a proteína de leite de vaca desenvolve por meio de um mecanismo imunológico que é ativado sob uma reação adversa ao componente protéico do leite. O sistema imunológico é um sistema destinado a reconhecer por meio de mecanismos diferentes tudo o que for próprio, bem como reconhecer substâncias que causam agressões ao indivíduo. O sistema imune tem como função básica defender o organismo humano sob o ataque de agentes infecciosos que o ambiente externo oferece A alergia à proteína do leite de vaca é uma reação causada ao organismo humano de um indivíduo sensível a proteína disponibilizada e natural no leite de vaca e seus derivados, sendo fundamental seu diagnóstico a fim de evitar manifestação clínicas variando de leve a grave dependendo da quantidade do componente alérgico ingerido, o tratamento nutricional adequado para qualidade de vida do indivíduo afetado. O objetivo deste trabalho foi ampliar o conhecimento deste assunto, por meio de revisões bibliográficas, esclarecer as reações alérgicas mediadas por anticorpos, os diferentes tipos de hipersensibilidades e reações alérgicas, ilustrando as manifestações clínicas, diagnóstico e terapia nutricional correta para que o indivíduo portador da alergia a proteína do leite de vaca ao ser diagnosticado tenha uma sobrevida normal com a dieta de exclusão. Após criteriosa análise dos dados levantados, a principal consideração final é sobre a importância do diagnóstico precoce e envolvimento dos profissionais da área da saúde, principalmente o profissional nutricionista, na prevenção e tratamento dessa patologia. ABSTRACT The prevalence of allergic diseases in children and adults has increased considerably in recent decades. Food allergies are part of this increase and become a major health problem impacting significantly on the quality of life of individuals. Health risks increase as the foods consumed are processed and increasingly complex. In this context, food allergies are more common in pediatric patients than in adults and has considerable impact on medical, financial and social. Allergy to cow 's milk protein is the most common food allergy in childhood, however, the clinical presentation of the disease depends and varies due to the immune response elicited by food antigen and its diagnosis is difficult , since there is no combination of tests that provides such a diagnosis. Allergy to cow's milk protein developed through an immune mechanism which is activated under an adverse reaction to the protein component of milk. The immune system is a system designed to recognize through mechanisms different everything we own, and how to recognize substances that cause the individual assaults. The immune system function is to defend basic human organism under attack by infectious agents that the external environment offers allergy to the protein in cow's milk is a reaction caused to the human body of a sensitive individual and natural protein available in cow's milk and its derivatives, its diagnosis is fundamental to prevent clinical manifestations ranging from mild to severe depending on the amount ingested allergen component, suitable for the nutritional treatment quality of life of the affected individual. The objective of this work was to extend the knowledge of this subject, through literature review, clarify allergic reactions mediated by antibodies, the different types of hypersensitivity and allergic reactions, illustrating the clinical manifestations, diagnosis and nutritional therapy to correct the individual carrier allergy to cow 's milk protein has to be diagnosed with a survival standard elimination diet. After careful analysis of the data, the main final consideration is about the importance of early diagnosis and involvement of health professionals, especially professional nutritionists, prevention and treatment of this pathology.
