Adiciona-se o tomate, aos cubos, sem pele e grainhas. Refresca-se com o vinho branco. A meio de estufar introduzem-se as batatas cortadas em rodelas grossas. O peixe introduz-se quando as batatas estiverem a meio da cozedura. Rectificam-se os tempêros. Serve-se sobre as fatias de pão alentejano finamente fatiado. Method Sauté the onions, garlic, bay-leaf, peppers and seasonings. Add the tomatoes, diced, with the skins and seeds removed. Sprinkle with white wine. Half way through the cooking, add the potatoes, cut into thick wedges. When the potatoes are half done, add the fish and adjust the seasonings. Hortelã a gosto Preparação Põe-se tudo a cozer. Quando os pombos estiverem bem cozidos, retiram-se do caldo e desossam-se. Reserva-se o caldo da cozedura. Coze-se o arroz no caldo da cozedura dos pombos. Na ponta final, adicione a carne dos pombos, os enchidos finamente fatiados e um ramo de hortelã. SPECIALITIES wIld pIdgeon wItH rIce Ingredients (for 4 people) 4 wild pidgeons 0,5 kg of “linguiça” (very thin paprika sausage) 250 gr bacon salt rice mint to taste Method Boil all the ingredients together. When the pidgeons are done, take them out of the cooking stock and remove the bones. Keep the cooking stock. Cook the rice in the stock. Just before it is ready, add the pidgeon meat, the sausage (sliced into very thin wedges) and a bunch of mint. 160 Fialho01_Final_C e guardas.p65 160 09-10-2009, 0:01 Fialho01_Final_C e guardas.p65 161 09-10-2009, 0:01 ESPECIALIDADES lombo de Porco com amêIJoas Ingredientes (para 4 Pessoas) 600 gr de Lombo de porco 4 dentes de alho 4 colheres de sopa de massa de pimentão 4 colheres de sopa de banha 400 gr de amêijoas 1 dl vinho branco 1 limão para guarnecer salsa picada Preparação Tempera-se a carne de véspera, com a massa de pimentão e o alho. Frita-se na banha. Juntam-se as amêijoas, com casca, e refresca-se com o vinho branco. Quando estas estiverem abertas, o prato está pronto. SPECIALITIES Pork loIn wIth Clams Ingredients (for 4 people) 600 gr of pork loin 4 garlic cloves 4 tablespoons of paprika paste 4 tablespoons of pork lard 400 gr of clams 1 dl of white wine 1 lemon for the garnish chopped italian parsley Method Season the meat overnight with paprika paste and garlic. Fry the meat in the pork lard. Add the clams (in their shells) and sprinkle with the white wine. When the shells are open, the dish is ready to serve. Garnish with chopped parsley and lemon wedges. Retire do lume e deixe arrefecer. Bata as gemas de ovos e passe-as por um passador de rede para dentro do tacho. Vá mexendo sempre até as gemas engrossarem. Retire do lume até arrefecerem. Deite os ovos-moles em tigelas individuais, pulverize com açúcar e queime com um ferro em brasa. Quando ainda quente, deite o sumo de limão por cima. 300 gr sugar 12 egg yolks 2 dl water juice of 2 – 3 lemons Heat the water with the sugar until you obtain «ponto de pasta», this means achieving Baumé 28º, Centigrade 101º, or the sugar coats the back of a spoon. Remove from the heat and allow to cool. Beat the yolks and sieve them directly into the pan with the sugar paste. Stir continuously until the yolks thicken. Remove from the heat and allow to cool.
