The only option to soften the impact of high oil prices that is likely to meet the magnitude of the
challenge is a transition to a low-carbon economy. But this will require political leadership and policy
certainty to create a long-term, sufficient and consistent incentive structure for renewable energy.
We recommend the government employs available and new mechanisms for public sector finance,
such as a Green Investment Bank to change investor behaviour in favour of new, low carbon sectors.
Adaptive responses such as investment into mass public transit systems, more efficient vehicles,
people travelling less due to home working, and cheaper, low carbon energy alternatives will also all
help.
In addition to issues of security and sustainability, the impact of economic peak oil is another
important reason to reduce an economy’s energy intensity and dependence on oil.

• Eco-labels provide information about the environmental characteristics of a product.
Eco-labels are effective if consumers are willing to pay a price premium for green
products which are costlier to produce. If consumers are not willing to pay a premium
for an eco-label why should an organization still seek certification? Are there other
benefits associated with the certification process? We investigated this question in the
wine industry, where many wineries obtain ecocertification but do not label it on their
wine bottle.
• Our results show that eco-labeling has a negative impact on prices in the wine industry,
while we find a price premium associated with eco-certification.
• The negative result associated with ecolabeling can be explained by the lack of
understanding of the eco-certification process.

syrups are dark, fortified and more
versatile than you might think.
• Another huge trend in the beverage
world is locally produced wine, and in
particularurban wineries, which go
beyond the tasting room to include inhouse grape processing as well.
• Also on the hot tip of the world: wines
from South America. Robust bottles
from Chile, Argentina and even
Uruguay are not only getting better
every year, they’re getting cheaper.
• South African wines continue to
increase in popularity as well, but
when shopping for wine from these
countries, be sure to purchase
certified fair-trade wines.

- Chefs are huge supporters of shopping
local. Bobby Flay hosted a 5K charity run
with chefs and attendees to raise money
forWholesome Wave, a community based
organization that improves the accessibility
and affordability of healthy, locally grown
fruits and vegetables.
- Buy sustainable fish. Whole Foods
Market took a huge step forward in April
2012 as the first retailer to sell only
sustainable fish. They no longer carry
“red-rated” fish – species that suffer from
overfishing or catching methods that
harm other marine life or habitats – and
hopes to reverse similar global
trends. Whole Foods Market sponsored a
Fishmonger FaceOff at the Food & Wine
Classic in an effort to educate shoppers
about responsibly caught seafood choices
and cooking tips.
