Das Unternehmen Rosemarie Eppers stellt neben Basisprodukten zur Verarbeitung auch würzige Produkte für den Endverbraucher her. Wichtige Abnehmer davon sind neben Lebensmittel verarbeitenden Betrieben vor allem die Lebensmittelabteilungen der großen Handelsketten, die Fleischwarenindustrie und die Fleischerfachgeschäfte. ein mittelständisches Unternehmen unerlässlich“, erklärt sie. „Nur so sichern wir unsere stabile Marktposition und können kontinuierlich wachsen.“ Auch in diesem Jahr rechnet die Unternehmensleitung mit einem zweistelligen Umsatzzuwachs. Im Unternehmensbereich Produktentwicklung und Qualitätssicherung sind zehn Personen beschäftigt. Die Produktion und Ernte der Rohstoffe werden durch regelmäßige Audits in den Herkunftsländern kontrolliert. Eine 100-%ige Qualitätskontrolle der Chargen im Produktionsbetrieb sorgt außerdem für die gewährleistete Produktsicherheit. Nach Außen kann Eppers die Lebensmittelsicherheit und Produktqualität durch Standards wie IFS5 „higher level“ und das Bio-Zertifikat vorweisen. Foto: Stark Sauce statt Brät Seit 1989 verpackt Eppers Saucen und Suppen mit Clipmaschinen von Poly-clip System, Frankfurt. Der Abfüllprozess beginnt mit unterschiedlichen Chargen, die im Homogenisator gleichmäßig vermischt werden. Über Rohrleitungen gelangt die Mischung in einen Füller und über den zwischengeschalteten Metalldetektor zum Clipautomaten. Etwa 10 t füllen die Mitarbeiter täglich am FCA 3430 ab. Die Kalibergrößen reichen dabei von 19 bis 150 mm. Der Doppel-Clip-Automat ist mit der Füllmaschinen mechanisch und elektrisch gekoppelt. Dabei werden die Portionen grammgenau übernommen und per Clip verschlossen. Im Produktdatenspeicher können spezifische Einstellungen auf Abruf hinterlegt werden. Hier sind auch die Geschwindigkeitsregelung und die Einstellung für die pneumatische Darmbremse hinterlegt. Zum Darmnachladen lässt sich der Clipkopf automatisch unterstützt abschwenken. Nach dem Füllen werden die „Saucenwürste“ noch zum Pasteurisieren in heißes Wasser gegeben. Dabei dehnt sich der Inhalt noch weiter aus – die Clips müssen dieser Belastung natürlich standhalten. Derzeit muss das Bedienpersonal die Raupen noch wässern und neu aufziehen. Die Anschaffung eines Clipautomaten für Flachfolien – des TSCA-N 120 von Poly-clip System – ist aber schon beschlossene Sache. Bei diesem Transfer-Siegel/ Clip-Automaten entfällt das Wässern und auch der Thermodrucker bietet Vorteile durch sein gutes Druckbild. Die Maschine verarbeitet Flachfolie von der Rolle zum füllfertigen Schlauch, der in der integrierten Clipeinheit verschlossen wird. Alle gebräuchlichen Folien in einfacher oder beschichteter Form sowie Verbundfolien bis Kaliber 120 mm können verarbeitet werden. Die verwendeten Folienrollen fassen bis zu 3.000 m. Kurze Rüstzeiten für die unterschiedlichsten Packungsgrößen werden mit dem Schnellwechsel-Formatsatz erzielt. Der TSCA-N besteht aus einer synchron arbeitenden TransferSiegel- und Doppel-Clip-Einheit. Zusammen mit einem vorgeschalteten Füller bildet er dann eine kontinuierlich arbeitende Produktionslinie. Wegen des Pasteurisierens muss der Clip zuverlässig schließen und der Aufdruck darf nicht verwischen. Und da durch das Alleinstellungsmerkmal der schnittfesten Formsaucen das Auftragsvolumen für die Portionsdärme kontinuierlich weiter wächst, muss sich die Cliptechnik mit den Bedürfnissen des Unternehmens entwickeln. „Uns kommt es darauf an, dass die Chargen bei gleicher Verpackungsqualität wie mit dem FCA 3430 kontinuierlich und ohne Darmwechsel abgefüllt werden können. Die Formsaucen können auch im Slicer oder einem Spikomat verarbeitet werden. Verpackt werden die Produkte sowohl in Portionsverpackungen für die Systemgastronomie als auch in Produktgrößen für Endverbraucher und in vielen Formaten, Packungen und Gebinden von 20 ml bis zu 1.000-l-Einheiten. Eine Besonderheit von Eppers ist, dass die Großgebinde in Portionsdärmen von 100g-Portionsrollen über 500g-Portionsdärme bis hin zu eckigen 2,7 kgVorratsdärmen, abgefüllt werden. „Im Vergleich zu Dosen oder Eimern konnten wir durch das Abfüllen in Kunststoffdärme das Verpackungsaufkommen um 97 % reduzieren“, erläutert Nicole Leyendecker-Eppers. The processing options range from round and long slices through to strips, cubes, crescents and stars through to animal shapes which can be used for the filling of roast specialities, schnitzels, meat loafs, pâtés, mince meat, kebabs, sausage specialities and fish for both self-service and over-the-counter sales. The preformed sauces can also be processed in the slicer or in a Spikomat. The products are packaged either in portioned sizes for system gastronomy or in product sizes for the consumer, and come in a large selection of formats, packages and skeins ranging from units of 20ml to 1,000l. A particular feature at Eppers is the fact that the large skeins are filled in portioned casings of 100g, through to 500-g portioned casings through to the square 2.7kg reserve casings. “Filling artificial casings has meant a 97% reduction in packaging over the use of tins or buckets”, explains Nicole Leyendecker-Eppers. Furthermore, portioned casings are the best solution for further mechanical processing. Sauce instead of sausage meat Eppers has been using clip machines by Poly-clip System, Frankfurt, to package its sauces and soups since 1989. The filling process begins with various batches which are consistently mixed in the homogenisator. Via pipes, the mixture is forwarded to a filler and through the interconnected metal detector, to the clipping machine. The employees fill around 10t per day on the FCA 3430. The calibres range from 19 to 150mm. The double-clip machine is mechanically and electrically linked with the filling machines. The portions are stuffed right down to the precise gram, and sealed by a clip. Specific settings can be stored in the product data memory which can be retrieved. The speed control and the setting for the pneumatic casing brake are also stored here. The clipping head can be automatically tilted for recharging the casings. Following the filling process, the “sauce sausages” are forwarded to hot water to be pasteurised. During the pasteurisation process, the contents expand further – the clips therefore have to be resistant to this stress. At the moment, the operators still have to water the casings, and put them on to the fillers. The purchase of a clipping machine for flat foils – the TSCA-N65 by Poly-clip System – however, is already decided. This transfer-seal/clipping machine does away with the need to water the casings, and the thermal printer also has advantages in the form of its good printed image. The machine processes flat foils from the reel to the tube waiting to be filled and which is closed in the integrated clipping unit. All standard foils – either single-layer or coated – and compound foils with a calibre of 65-120mm can be used. The reels of foil used can hold a length of up to 3,000m. Short equipping times for the various product sizes are achieved thanks to the fast change-over tools. The TSCA-N comprises a synchronous working transfer seal and double-clip unit. Together with an interconnected filler, it forms a continuously-working production line. Eppers has never used preservatives. Due to the pasteurisation, the clipmust close reliably and the imprint shouldn’t smear. Since the unique position characteristic of the sliceable preformed sauces is ensuring a continual increase in the order volumes for the portioned casings, the clip technology must develop in line with the company’s needs. “Our main concern is that the batches can be filled continuously and without the need for a change of casing in the same way as is done with the FCA 3430, whilst maintaining the same quality of packaging.
